Chocolate Biscuits
Motherhood obviously took a toil on my mum, because when I was growing up, I don’t remember my mum as an awesome cook. She was just an average housewife who cooks up the usual dishes for our meals. Nothing too fanciful. Just simple fare most of the time.
Turned out that once she’s shed off the need to mother us, her creative horns started to show. She begun to display her talents in flower arrangements, cushion-making and baking of muffins, cookies, puffs, etc. She can cook and make so many lovely dishes and delicacies that many people look up to her and want to learn from her. She’s even doing bi-weekly cooking lessons in church. It’s amazing how much she’s achieved simply because of her passion in doing all those things.
Today she made chocolate biscuits for us!

My mum took only 30mins from scratch to produce a whole batch of delicious biscuits, so I asked her for the recipe. It’s incredibly easy, so I’m sharing with all you dear people! Enjoy! =D

Ingredients:
(A) 250g butter/ margarine, 120g castor sugar, 1 egg yolk, 1.5 tsp cocoa powder
(B) 420g sifted plain flour, 60g chocolate rice
Decoration:
Some chocolate chips
Method:
- Put all ingredients A into a mixer and cream till well combined.
- Mix in ingredients B and form into a pliable dough, should be as firm as the ear.
- Place the dough in between 2 layers of grease-proof paper and roll it to 3mm thick. Cut with different-shaped cookie cutter and arrange the shapes on a greased baking tray. Decorate with chocolate chips.
- Bake in a pre-heated oven at 180 Degrees Celsius for about 15-20 minutes, till lightly brown. Leave to cool before storing.
